They're not really that hard and you can make them just like you like them.
Crumble up your favorite cracker about a cup full
cut boneless, skinless chicken breast into small chucks
Take one egg add a teaspoon of water and beat
Add egg to chicken chucks making sure each piece is coated.
Then dip chicken in cracker crumbles and set on a foil cover cookie sheet
Bake at 350 for about 25 minutes until brown.
In the picture above I made them with scallop potatoes.
thinly slice 3 or 4 potatoes
In a microwave safe bowl stir together
3 tablespoons of butter
2 tablespoons of flour
1 teaspoon of salt
1/4 teaspoon of pepper
2 1/2 cups of milk
Heat in the microwave on high, 3 minutes at a time for about 9 minutes.
mixture should be slightly thick.
In a casserole dish layer potatoes, milk sauce, and cheese.
Cover.
Bake in microwave for 20 minutes and let stand about 5 minutes before serving.
