My Accidental Fab-Favorite #Holiday Fudge #Recipe

I make no secret of the fact that I’m a die-hard chocolate fanatic. (Even if I did, I fear my waistline might give me away.) Although I sneak chocolaty treats into my diet all year long, there’s one mega-indulgence that I only bring out during the holidays. It’s a creamy, super easy fudge recipe that was elevated from great to fabulous one year by accident. I sent my husband to shop for the ingredients, and he came home with milk chocolate chips instead of my trusty old semi-sweet. I tried them out with a skeptical heart, and the results rocked our world.
This fudge comes as close as I’ve ever gotten to duplicating my absolute childhood favorite: the pan fudge sold at the candy stores at Disneyland. Yum. Even better, it only requires four ingredients and no candy thermometer.
Ingredients:
24 ounces (approx. 1 ½ bags) of milk chocolate chips
1 can (14 ounces) sweetened condensed milk
¼ tsp salt
1 tsp vanilla

Directions:
In heavy saucepan over low heat, melt chocolate chips together with sweetened condensed milk and salt. Stir constantly to avoid scorching. As soon as chips are melted, remove from heat, stir in vanilla, and pour into a greased 8x8 inch pan. Chill until solid, cut into squares.
Makes about 24 squares (depending on the size of your cuts!)
Optional: add a handful of chopped nuts OR substitute the ½ bag of chocolate chips with flavored chips of your choice or about ½ cup nut butter.

Stephanie walked out of the bathroom with as little limp as she could muster, thankful when a flood of adrenaline aided the cause. She wanted to give the impression she was less helpless and pathetic than the picture she’d painted thus far. Thomas stood by a newly stoked fire, and she ignored his searing gaze while she headed for the couch. Her socks, boots, and parka lay nearby, tempting her. Donning the latter now would be too obvious, however. She’d have to make a grab for the coat on her way out.
“Brr,” she said, making a show of rubbing her arms. “Cold after that shower.” She sat on the couch and pulled a quilt around her shoulders to give the appearance of settling in while she tugged on her socks and footwear. “But hopefully I smell better now.”
“Stephanie.”
She went on ignoring him and laced her boots tight.
“Stephanie.” He moved toward her.
“Hmm?”
She threw him a quick glance and a smile, refusing to meet his eyes. Then he knelt in front of her and took hold of her chin so she couldn’t look away.
His eyes searched hers. “I know what you’re thinking.”
“What I’m thinking?” She tried to keep an innocent tone. “I don’t know what you mean.”
His arched brow told her he knew she was lying. “You think I’m a vampire.”
She laughed. “Vampires don’t exist.” Please, God, let him laugh along. Her smile faded when he didn’t. “So, it’s true then?”
He glanced away, his lack of response providing all the answer she needed and didn’t want.
She shook her head. “Guess I didn’t do a convincing job pretending I didn’t know.”
“We can sense those who see us for what we are. It’s a built-in survival trait.”
“Handy skill.”
“I’m sorry. I didn’t want you to figure this out.”
She rubbed her arms again, this time against a true chill. “You’re a vampire. That just figures.”
“What does?”
She raised her arms. “Oh, just the old Stephanie Mars luck. I go for a simple outing and get dragged off by a raging creek. I meet the perfect guy, and he turns out to be an undead monster. No offense.”
His brow rose. “You think I’m the perfect guy?”
She shrugged. “What I think is that none of this is really happening. Maybe I bashed my skull so hard that this conversation is all going on in my head while I’m lying unconscious in a hospital somewhere. So yeah, if I have to be stuck in a concussive hallucination, why not include the perfect guy?”
A smile lit his dark expression out of nowhere and threatened to steal her breath. When white teeth flashed, she couldn’t help but look for sharp points. She saw none, and the smile vanished as fast as it had appeared. “So what if it turns out this isn’t a hallucination?” he said. “What if your so-called perfect guy is real, and he’s a vampire?”

Buttoning her coat, she pulled it tighter as she headed for the door on her way out of the tavern.
“Please do not tell me you came alone,” a gentleman with thick brown hair said as he held open the door for her. He towered above Elizabeth, gazing down at her with a stern gaze.
“My friend left early,” Elizabeth said; it was a lie. Had Isabel shown up, she would have had someone to accompany her at least half way home on foot. The walk was not bad, she had learned ways to cut through town and make the journey quicker.
“Right,” he said, staring at her, sizing her up. He did not so much as blink as he refused to look away.
He had the palest blue eyes that she had ever seen, with thick dark lashes that matched his mahogany hair. He was striking, no doubt, but Elizabeth had done well to avoid men and did not wish to change her ways now. She hadn’t paid anyone much attention in the tavern, but the way he answered, she half-wondered if he’d been watching her.
He shook his head, clearly unpleased. “It is not right for a lady such as yourself to be walking alone at night. I shall accompany you home. Unless you have a carriage waiting for you?” He glanced outside, waiting to see if her coachman would show himself and take responsibility for the girl being on her own. No one came forward.
“Sir, I do not know you,” Elizabeth said, glancing at him from head to toe. He was well dressed, a striking gentleman a few years older than her. “It would be improper for you, a stranger, to walk me to my door.” He appeared pleasant and kind but that did not mean the moment they stepped away from the tavern that he would not turn on her and insist to steal her virtue in the darkened streets. Perhaps she was foolish for being so cautious but she could not help the feeling that she found unsettling as he offered to escort her home. Besides, should he escort her to the door, her father would have had a fit to discover she had snuck out.
 “Then perhaps my coachman and I will accompany you to your home. Surely your husband or father would be grateful to know that you have returned safely.”
He didn’t seem to back down, no matter how hard she pushed that she did not require an escort to accompany her home.

The choice between staying in on a Saturday night to clean and going to see Cheyenne at his first real gig hadn’t been a complicated decision. Apple Pie Bars

Ingredients
1 package sugar cookie mix
1 egg
1/2-cup butter, melted
3/4 of can of apple pie filling
2 tbsp. brown sugar
Ground cinnamon to taste

Preheat oven to 375 degrees. Butter a 8 x 8 in baking dish.
In a mixing bowl, combine sugar cookie mix, egg and melted butter.  Set aside ONE cup. Press the rest of the dough into bottom of pan.

Spread apple pie filling over dough. Break reserved cup of dough into small pieces and distribute evenly on top of filling.

Combine brown sugar and ground cinnamon. Sprinkle on top of dough. Bake for 30 minutes or until edges are brown and dough is cooked through. (Depending on your oven this could take longer.)

If desired, serve with vanilla ice cream. (I highly recommend it.)

1.       Who or what was the inspiration for Caria? Is she anything like you?
Well I’ve never joined a crew of space pirates and raided inter-stellar craft, but I might if the opportunity arose. I suppose Caria is something of an adventurer, and I’m a bit like that too. She tends to jump in with both feet, then worry about the consequences later. In Her Alien Commander she is often impetuous, but she has a streak of bloody-minded determination too, which I admire. The odds might be stacked against her, but she doesn’t give up.

2.       So, tell us a bit more about Phahlen. He’s stern and sexy, with a twitchy palm, but what else is there to know?
Well, I think you just about covered the basics there. Phahlen has a strong sense of duty, and of justice, though Caria may not think so, at least not at first. He knows what he wants from her, but he takes care of her too. He saves her life at the start of the book, and it’s Phahlen who finds a solution to the problem of her criminal past. He’s always there when she needs him, though it takes her a while to appreciate his finer qualities.

3.       How many books have you written? Are they all spanking fiction?
I think I have about forty titles out now, and they are all erotic stories. Some are more BDSM themed and some are spanking/domestic discipline. At first I wrote just contemporary stories, then I started adding a few historicals as well. Her Alien Commander is my first sci-fi and I loved writing it.

4.       Why do you enjoy writing sci-fi?
Because I love the idea of playing God. I can create just the world(s) I want, set up whatever social system suits my story, and craft the most amazing characters. The usual laws of physics, time, and cultural behavior don’t count so the story-telling can be much more creative and inventive in an alternative universe. Stories which might be really controversial if written as a contemporary romance can be ‘cloaked’ in a sci-fi.

5.       What advice would you have for writers who decide to try their hand at erotica?
I’d tell them to have a go, but to have a decent thesaurus to hand. And an internet connection. Youtube is the erotica writer’s friend.
6.       Do you see writing as a career?
Yes. I try to be fairly ordered about it. I like to be at my desk (well, more accurately the kitchen table) laptop fired up and coffee to hand, by nine in the morning and I tend to write for most of the day then. There are also a lot of related tasks to keep on top of, mainly to do with promo or research, or keeping in touch with readers and other authors. It’s definitely a full-time job for me.

7.       Do you recall how your interest in writing originated?
I think it was always there, though I only started writing properly about three years ago. I have always tended to plot stories in my head though, often when sitting in traffic jams on my daily commute. I now work at home so all that time spent inhaling exhaust fumes is finally paying off.

8.       If you could have been told one thing that you weren't told when you were a teenager, what would you like to have heard?
I was given lots of advice as a teenager, much of it unsolicited and not especially good. I think we all have to make our own mistakes, but hopefully I haven’t made the same mistake to many times. That would be sad.
Looking back, I think the most important thing I picked up along the way was that we all have choices, all the time. We’re entitled to choose our own way in life, but we should also be ready to own and accept the consequences of our decisions.
Someone once invited me to cast my mind forward to a time perhaps sixty years from now when I’ll be long-gone and my daughter (currently eighteen) is herself entering old age. Imagine she’s talking to her grandchildren, telling them about me. What would I like her to be saying? My actions now, today, will dictate what those obituaries might be so don’t leave it until later to be the sort of person you want to be remembered as.

9.       If you had to describe yourself using three words, it would be…
Resilient. Creative. Calm.

10.   What would you do if you were the last person on this earth?
Turn out the lights.

11.   If you were to write a book about yourself, what would you name it?
I think at some level or other they are all a little bit about me. I could never write a book about a heroine I didn’t actually like or identify with in some way. Maybe I’d call my autobiography Made a Difference, because I hope that would be true. Perhaps that should be on my gravestone rather than a book cover, come the day.

12.   What's your favorite love story? (movie or book)
I adore Love Actually and I can’t count how many times I’ve seen that movie. It has lots of love stories all rolled up and woven into each other, but I think perhaps my favourite is the one featuring Hugh Grant.
I also remember reading Katherine by Anya Seton many years ago, and I’ve never forgotten the magic that shimmers between Katherine and her hero, John of Gaunt. Their lifetime love affair is set against the dramatic backdrop of medieval England, a period I also like to write about.

“You have no privacy now, Caria.”
And didn’t she know it? That examination was proof enough. She tilted her chin again but offered no comment.
“Is that it? Have you no more to say to me?”
“No, sir.”
“You surprise me, Caria. I had expected to hear of your fears that once I learnt of your infertility I might find myself with no use for you after all. I don’t flatter myself that you harbour any real enthusiasm for your new station, but the alternatives are perhaps even less palatable. I believe you thought to avoid a worse fate by pretending acceptance of my terms. Am I right?”
Caria flattened her mouth, determined not to answer if she could help it.
“So, despite agreeing with me just now that omission of the truth is as culpable as lying to me, you still persist. You disappoint me, Caria.”
That remark stung her into offering something. Anything. “I… I had no idea what was wrong, that there even was anything wrong with me. I thought that maybe I was just unlucky.”
He shook his head. “You knew, or at least you suspected. I wondered why you were so tense, but it’s all clear enough now. You knew we’d discover the truth, just as I’m discovering it now despite your best efforts. Shall we cease this game, Caria?”
“I don’t know what you mean, sir.”
“Liar. I suggest you stop now before you make an already precarious situation infinitely worse.” He paused and watched her.
Caria felt not unlike a mouse caught in a cat’s claws, helpless and unable to escape, an unwitting plaything.
Phahlen continued. “I understand fear well enough, Caria, and I know it can drive us all to make poor decisions. You have no reason, yet, to trust me and it may surprise you to learn I understand why you kept this information to yourself. I might have done the same in your situation. It’s your insistence on clinging to this falsehood, though, which concerns me now. I need to know what you’re thinking and feeling, otherwise I will not be in a position to take care of you.”
“Take care of me?” Caria couldn’t contain her snort of derision. “You call abduction, imprisonment, and assault taking care of me? Please, Commander, do not trouble yourself further on my behalf.”
His eyes narrowed, and Caria knew she had gone too far. This Vahlean had made it clear how he would deal with insubordination and she had no reason to suppose he would welcome her sarcasm either. She stepped backward, her instinct to put more distance between herself and his anger.
Phahlen rose from his seat and came around the desk. He stopped and leaned one hip on the edge, watching as Caria edged further away. He said nothing, just pointed to a spot on the floor about two feet in front of him.
Caria’s brief flirtation with bravado evaporated. He would spank her again, or worse. No one on board this ship would help her, there was no escape. Slowly, her eyes on the floor, she returned to stand on the spot he indicated.
She was surprised when he placed two fingers under her chin and tipped her face up so he could meet her gaze. His eyes were stern, but not unkind. Perhaps he did understand after all.
“How long did you expect your deception to last, Caria? Did you imagine you might get away with it, even?”
“No, sir,” she whispered. “I, I didn’t think it through.” That, at least, was true. Her actions had been on the spur of the moment.
“Didn’t you? I’m not so sure. I wonder if you perhaps thought to make your escape before your little charade was discovered.”
“No, sir, I—”
“Caria…” The warning in his tone was beyond misinterpretation. And yet again he had scored a direct hit.
“I… I believed I might… That you…”
“Quite. But that’s not going to happen. You’re going nowhere unless I permit it, and the sooner you reconcile yourself to that reality, the better.
