Here is my recipe for 

A Tart Treat

Ingredients
2/3 c. shortening
2 1/2 c. sifted flour
1 tsp. salt
1/4 sugar
1/3 c. cold water
Cut shortening into flour, sugar and salt until
resembles coarse meal. Add cold water slowly until
mixture holds together. (I do this in a food
processor)

Roll out to 1/8 inch thickness.
Line two 9 inch pie pans.

Lemon Filling
2 tbsp. butter
1 c. sugar
3 eggs yolks
3 eggs whites
3 tbsp. flour
1/2 tsp. salt
Juice and grated rind of 1 lemon
1 1/2 c. hot milk

Cream butter and sugar together. Add egg yolks and
beat until light and fluffy. Stir in Flour, salt, lemon
juice and rind. Once combined add hot milk.

Beat egg white until stiff and fold egg whites into
lemon mixture.

Pour into crusts.

Bake at 400 degrees for 35 to 40 minutes.
Chill before serving with whipping cream.
